I have been trained in the restaurant and catering business by my Neapolitan family who own restaurants in Rome. I grew up cooking professionally in kitchens where the tradition for the old Italian cuisine was respected as a dogma. I also liked to experiment beyond the tradition by finding new flavor combinations and looking for the best way to present a plate. Cooking in American people’s homes has made me aware of the American customer’s particular tastes and preferences.
